Welcome to the MFC/Healthy Eating Club Cookbook rolling thread, which supplements the main MFC discussion threads, and is bumped up each week to accompany them.
This is your space for posting original diet-friendly recipes and foodie tips, either your own, or spotted/tasted elsewhere and then adapted substantially to suit your taste and diet. Also, if you come across a good foodie website for MFCers of any persuasion, or are thrilled by a cookbook and would like to recommend it, please don't hesitate to mention it. Of course, feedback on the recipes you鈥檝e found there and tried out are very welcome too.
Apart from recipes you鈥檇 like to share, suggestions for themes for future Cookbook threads, or any queries and requests in the foodline, are also very welcome. If you鈥檝e come across a particular food item and aren鈥檛 sure what to do with it (or have run out of ideas for your veg boxes, say!), or are looking for inspiration to make your chosen diet more interesting 鈥 just fire away.
Please don鈥檛 worry about adding measurements for the ingredients in your recipe if you don鈥檛 usually do this, or any dieting information either, as I can always add either or both on afterwards. It鈥檚 become a bit of a hobby of mine, but I really don鈥檛 assume that everyone is as fond of putting on this particular anorak as I am.

Cruelly cross threading here ... but Nifty, those of us with a Remoska don't need a chef's hat as we just bung the ingredients in the Remoska and it comes out

Right .... sorry I have been delayed. All work and no play for a while.
Here is a recipe that is amazing and totally original (she said modestly) .
Have you ever seen cans of smoked mussels in the supermarket? Near the sardines ....
I have also found small tins of laver bread in T*sco.
Combine the two and you have something angelic..... if you like sea-ey things.
The first time I used them together was in tiny "pasties" with puff pastry as a party nibble. A circle of the pastry, a dab of laver bread, a smoked mussel. Fold over, brush with egg glaze and bake.
I know pastry isn't diet-friendly so tried another. Melted gelatine leaves, then heated gently. Blitzed with the laver bread, mussels and a tin of tuna as a bland-ish pad-out. Allow to set in a little mould. Serve with leaves or celery or bread or oatcakes as a starter.
Without the gelatine this would work as a dip, with crudites.

That's the stuff!
But I am sorry you have a shellfish allergy. It needs something quite strong-tasting. Maybe smoked mackerel would work, but smoked salmon would probably be too mild.

I have just posted this on the MFC thread but thought I'd put it here too.
Sounds little like haggis really (which I like a lot) but excellent as a nut / bean roast for veggie friends, or indeed for those of us who are cutting down fat and red meat.

OK my remoska comfort food.
Veg of any kind, simply hacked up and bunged in. If you have enough courgettes and mushrooms you don't even need any oil. Also diced spud. When everything is done, fry a relevant number of eggs in minimal oil, fling veg on plate, fling eggs on top and comfort-eat.
The eggs do need to be organic and preferably not have seen the inside of a fridge.

Can you do that without a remoska? What's the secret -- overhead cooking? So it would work by roasting the veg in an oven? Or grilling?

I took one of my wards to an 'Ask' restaurant today ..... I had a voucher for one free main meal.
I had a great, and healthy meal -- butterfly king prawns, masses of rocket. Chicken really nicely done with more salad and chips (of which I ate a few) .... I had asked for it without bread.
Water to drink and black coffee afterwards .....
Plus they gave me a new voucher for another free main course before 15th Feb.
Worth recommending, I thought.

There's something about the soft, slightly caramelised underneath (halved cherry toms help) and the crispy top plus the eggs slooshing down over it...do not be tempted to eat it before it is really ready as then it is unexciting.

Drystane, I have only had my Remoska for a few weeks and love the way it can turn a collection of even tired veggies into the most delicious concoction imaginable.
Whilst I love really crispy roast veggies I also like the slightly soft aspect that I have achieved in my R, but I wonder if you manage to get your roast veggies crispy?
I use a shallow pan and have reduced the amount of oil compared to how much I use to roast veggies in a gas oven. I spread the veggies out as much as possible.
Because it is possible to put the veggies in the R and pretty much forget them I wonder if I'm overcooking them? Do you have a rule of thumb of how long you cook your veggies for?

errr, when it looks, and feels, right. I use almost no oil at all. If you want crispy, lift the food closer to the lid with whatever object you have to hand...
There is a certain remoska-crispy that is different from any other.

Had a vegetarian friend to lunch at 45 minutes' notice and thought you might like the recipe for the soup I made ....
half an onion, chopped
teaspoon of Marigold organice vegetable stock in about a pint of water
Half a packet of frozen spinach -- about a pound I suppose
One orange
Cream
Nutmeg, salt and black pepper
Boil stock, add onion and grated zest of lemon. When boiling add spinach. Simmer. Cool a bit and blitz. Add squeezed orange juice, season with lots of nutmeg, some salt and pepper to taste.
Reheat gently. Add a good dollop of cream at the end and swirl to make a marbled effect with the very dark green soup.
It is rather gorgeous.
Served with a mini-loaf of Stilton bread I'd made after Christmas and some Somerset Brie ...

Thanks Katy. I've made the soup Ana posted and it's lovely. I was particularly pleased to see it as although we use spinach in salad I tend to end up chucking it when it gets tired and so this recipe is useful as I always have the other ingredients.
I'll ask the mods to remove Ana's unedited lemon juice version

I love celeriac, and even my offspring like it simmered in stock till tender, pur茅ed, and then mixed with an equal quantity of mashed potato. Great with some carrots on the side, and sossidges (poultry ones, natch) & onion gravy.
