Plum fritters with hot chocolate sauce

Plum Fritters

250g plain flour

50g castor sugar

1 and a half teaspoons baking powder

125ml buttermilk

125ml gingerbeer

2 eggs

150g chopped plums

Sift the flour and baking powder into a bowl and mix in the egg yolks, buttermilk and gingerbeer to a smooth batter.

Allow to rest for 20 minutes.

Whisk the egg whites in a clean bowl to stiff peaks.

Whisk in a third of the egg white, then add 2 more batches, folding in gently.

Fold in the plums.

Heat your deep fryer to 180oc or half fill a saucepan with oil and heat gently until a little of the batter fizzles.

Drop tablespoons of the batter into the oil and cook until golden and crisp – do in batches. Drain on kitchen paper and dust with icing sugar.

Hot Chocolate and rum sauce

150ml double cream

25ml rum

100g dark chocolate, chopped

Simmer the cream and rum together until hot.

Remove from heat and whisk in the chocolate.

Serve in a bowl to dip the fritters.
