Craig Grozier's Brussel sprout and Granny Smith apple Kimchi

Ingredients:-

500g finely sliced Brussel sprouts听

20g Maldon salt

95g caster sugar

10 cloves peeled garlic grated

100g grated ginger

50 g chilli powder

60g fish sauce

60g light soy

60g finely sliced spring onions

110g finely diced Granny Smiths apple听

Method:-

1. Toss the sprouts with the salt and 20g sugar, leave over night in the fridge.

2. The next day make a dressing with all the other ingredients, if necessary add around 80g water till it's a loose dressing.

3. Drain the sprouts and add to the dressing. Leave at room temp for 5 days or in the fridge for 2 weeks to mature. After this store in the fridge and keep for up to 2 weeks.
