Jak's Perfect Parsnips

500gr evenly sized parsnips<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />

2 tbsp of cous cous or polenta

25gr finely grated parmesan

陆 tsp dried mustard powder

Pinch of salt to finish(optional)

2tbsp Scottish rapeseed oil

1.听听听听听听 Peel & quarter the parsnips length ways( making sure the core is removed from the centre)

2.听听听听听听 Cook in boiling water for 3-4 minutes remove & allow to sit & dry for a minute

3.听听听听听听 First toss the parsnips in a bowl with the oil

4.听听听听听听 Then mix the cheese, polenta & mustard and mix all together and this will all stick

5.听听听听听听 Bake on an oven tray for 15 mins at 180c

Served hot from the oven
