Pasqua is a blend of grapes, Corvina, Croatina and Merlot. Alternatives to the Pasqua, stick with fruity Italian reds that are sleek with good acidity: Montepluciano D鈥橝bruzzo is a safe bet but for a good value all-rounder, every supermarket with have an own label Nero D鈥橝vola from Sicily for around six quid which will do nicely. The sun-drying of the grapes in this specific Pasqua wine boosts the velvet fruitiness which you could also find in a Vapolicella Ripasso.

A great alternative grape is Arneis but the good news is Fiano has a strong high street presence and you can pick up reliable examples from most supermarkets for under a tenner. The award-winning one I鈥檝e chosen has a bit more richness which is why it works so well with Theo's chicken, but in general my tip for the best Fiano is to stay in sunny southern Italy or Sicily for maximum ripeness and flavour.
