Cheese, Bacon and Scallion Soda with Sausage Patties and Poached Egg

Cheese, bacon and scallion sodas

350g plain flour
1 and half teaspoons baking soda
4 rashers streaky bacon, chopped
4 scallions, chopped
100g grated mature cheddar
300ml buttermilk

Place the flour in a bowl and mix in the soda.
Cook the bacon until crisp and golden. Cool and mix into the flour with the scallions and cheese. Add the buttermilk and bring to a dough – not too soft. Knead together gently on a floured surface. Roll to about 2cm thick and cut into 4 rounds. Allow to sit for 10 minutes.
Heat a griddle or heavy based pan over medium heat and add the sodas. Cook for about 4 minutes each side. Cook on their sides for a 30 seconds to cook through.

Sausage Patties
500g good butchers sausages skins removed
2 medium onions, finely chopped
3 tablespoons oil
2 teaspoons brown sugar
1 tablespoon balsamic vinegar
Cracked black pepper

Fry the onions until golden and add the sugar. Cook to caramelize and then add the vinegar. Check seasoning and cool.
Mix into the sausage meat well with the pepper.
Form into 4 patties. Heat the remaining oil in a pan and cook the patties for about 3 minutes each side.

Poached eggs
4 eggs
Tablespoon white wine vinegar
Salt

Bring a pan of water to the boil and add the vinegar and season with salt to taste. Crack the eggs into a vortex of the boiling water. Cook for about 3 minutes and then lift with a slotted spoon and drain on kitchen paper.
Split open the sodas and butter. Place a pattie on top and an egg on each.
