Beef Noodles

Beef with udon noodles, broccoli and miso

Ingredients

  • 200g rump steak cut into strips
  • 1 teaspoon finely chopped ginger
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1 head broccoli
  • 1 pack udon noodles
  • 1 tablespoon miso paste
  • 2 tablespoons rice vinegar or whatever vinegar you have
  • 1 tablespoon honey
  • 4 tablespoons water
  • 1 tablespoon cooking oil
  • 2 small onions, chopped
  • 1 clove garlic, minced
  • 25g shredded ginger
  • 1 tablespoon sesame seeds4 chopped scallions

Recipe

Toss the steak with the chopped ginger sesame oil and soy sauce and marinate in the fridge for at least 2 hours.

Cut the florets of the broccoli and shred the stalk.

Bring a large pot of water to the boil and add the noodles.

After a minute add the broccoli and cook for a further 3 minutes. Drain and cool under cold water. Toss in a tablespoon of oil and set aside.

Heat a wok and add the oil.

When smoking add the beef and seal off well.

Add the onions, ginger and garlic and cook until golden. Mix the miso with the vinegar, honey and water. Add the sesame seeds to the meat and cook for 30 seconds. Add the miso mixture, broccoli and noodles. Toss to heat through. Add the scallions and serve.
