Fairtrade banana bread french toast with fairtrade chocolate cream and caramelized banana

Banana Bread

Ingredients

275g plain flour
1 teaspoon baking soda
110g soft butter
225g soft brown sugar
2 eggs
4 ripe bananas, peeled and mashed
75ml buttermilk
½ teaspoon cinnamon
1 teaspoon vanilla extract

Method
Grease and line 2 x 1lb loaf tins with parchment paper and set oven to 180 oC.
Sift the flour and baking soda into a bowl.
Whisk the butter and sugar until pale and fluffy and add the eggs one at a time. Mix in the flour and banana in two batches. Fold in the buttermilk, cinnamon and vanilla.

French Toast

Ingredients
1 banana loaf, sliced
3 eggs
50ml double cream
50ml whole milk
25g butter
4 tablespoons oil

Method
Whisk the eggs, milk and cream together and add the bread. Allow to soak for a few minutes.
Heat half the butter and oil in a large pan and when the butter is bubbling add half of the bread. Cook for about one minute on each side. Keep one batch warm while you cook the other.

Fairtrade Chocolate Cream

Ingredients

500ml double cream
200g Fairtrade dark chocolate, chopped
50g castor sugar

Method
Take 150ml of the cream and sugar and place into a pan. Simmer until the sugar has dissolved. Add the chocolate and remove from heat. Stir until melted.
Whisk the remaining cream and fold in the chocolate mixture.
Serve on the side of the toast.

Caramelized bananas

Ingredients
4 bananas, peeled and sliced about 3 cm thick on the bias
2 tablespoons castor sugar

Method

Place the banana slices on a metal tray and sprinkle over the sugar on top.
Either place under a hot grill to caramelize or blow torch the top.
