Humans are the only animals that have managed to adapt to life in every habitat on Earth. From oceans to jungles, the poles to the deserts, Human Planet explores man's incredible ability to survive in the most extreme environments.

Three years in the making, the series travels to the far-flung corners of the globe – the team visited more than 70 filming locations – to bring the most diverse, original and, in some cases, never-before-seen stories of human endeavour to Ö÷²¥´óÐã One.

The series is narrated by John Hurt and features original music by world-renowned composer Nitin Sawhney.

Oceans: Into The Blue explores the extraordinary adaptability and ingenuity that enables humans to survive in the marine environment, combined with the profound effect living by the sea has had on our cultures.

In Northern Spain fishermen risk life and limb collecting highly valued goose barnacles – pounded by the Atlantic waves, they abseil down cliffs to reach their prize, which will fetch more than €200 a kilo at market. In Indonesia subsistence whalers from the village of Lamalera are also after a marine bounty – a huge sperm whale. Using bamboo harpoons, in their wooden boats, the men take on the whale in an almighty battle of wits and skill. If they succeed, their village will have food for months.

The fishermen of Laguna in Brazil have learned to harness the ocean's natural resources. Working in skilful harmony with dolphins, many of which they know by name, they are able to increase their seasonal harvest of mullet. In the distant islands off Papua New Guinea, "shark-caller" Blais – one of the last of his kind – also works with nature to use his ancient spiritual skills to hunt sharks.

In the coral seas surrounding the Philippines a crew of Paaling fishermen take their lives in their hands in a highly dangerous mass fishing technique. In this overfished area, diving to depths of over 40m is the only way to catch enough fish for the village. A generator, with its intricate web of hose pipes, provides the only air supply for the young divers below, who risk the all-too-lethal effects of the bends.

Few people in the world have such an intimate relationship with the sea as the elusive Bajau Laut sea gypsies who spend most of their lives afloat. Rarely visiting the mainland, the Bajau Laut live in stilt huts over the coral reefs and on houseboats; some of them still have an incredible ability to hunt underwater holding their breath. Human Planet follows one Bajau spear fisherman, called Sulbin, as he defies the usual laws of nature with an incredible underwater hunt, 20m down, lasting two-and-a-half minutes.

The Behind The Lens segment features the compelling stories of the Paaling fishermen.

Dale Templar, series producer for Human Planet says: "Filming in HD is an incredible challenge for documentary programme-makers. Human Planet was particularly difficult because our team had to operate the sensitive HD cameras in some of the most challenging and remote locations on the planet.

"The superb picture quality of HD demands means that finding perfect focus is critical to the camera operators.

"Unlike the controlled conditions of television drama productions, we are filming real people doing real things. This is extremely demanding on the crews. Our cameramen were often working on the end of a camera lens, in far from perfect light conditions, using a black and white view finder, which makes focusing a nightmare. Often there is no room for error, no option of a 'Take 2!'

"We don't get to see the footage in full HD quality until late on in the post-production process. We have to go through every shot with a fine-tooth comb. What we end up producing for the Ö÷²¥´óÐã HD channel is truly magnificent. Human Planet is filmed in the most stunning locations on Earth with the most amazing people and animals. The pictures jump off the screen, almost like 3D, transporting the audience to these extraordinary places."

On Ö÷²¥´óÐã Radio 3, Music Planet, a companion series featuring some of the music from Human Planet's locations, is presented by Andy Kershaw and Lucy Duran.

Ö÷²¥´óÐã One's popular winter-warmer Lark Rise To Candleford returns for a fourth series, teeming with its usual wit, intrigue and romance. Its vividly drawn, much-loved characters continue to delight and entertain.

The series opens with the arrival of Gabriel Cochrane, played by Richard Harrington, and sees the return of Dawn French's character, Caroline Arless, later in the run.

Gabriel is the handsome and once-wealthy owner of a large iron foundry. But after the bankruptcy of his business and the death of his new wife, Gabriel finds himself both penniless and homeless. Moved by his plight, Dorcas offers him a job as a blacksmith, and a room above the forge. But both she and Gabriel know that the solution is only temporary. Gabriel is determined to regain his wealth and position and bring down the banker, Steerforth, who he believes acted illegally and unethically in repossessing his home and business.

Over in Lark Rise, Emma is thrilled to receive a postal order from Robert, who is away working in Oxford. The hard-earned money will settle her many unpaid bills. She sends Edmund to Candleford to cash the postal order, and although it is a breach of procedure, Dorcas agrees to allow him to collect the money in place of Emma. That night, on his way home to Lark Rise, Edmund is robbed and arrives home to deliver the devastating news that all the money is gone. How will Emma manage with five mouths to feed and no money coming in? And when she discovers the truth behind the robbery, she is faced with an agonising dilemma.

Pearl Pratt, meanwhile, is delighted to have her beloved sister Ruby back home. Her romance with the Pontefract undertaker is apparently over – Ruby dissolves into tears at the mere mention of his name, but will not say what has happened. While Ruby has been away, Daniel has settled in nicely at the Pratts, and Pearl is spoiling him rotten with steam puddings and starched collars. Ruby resents being usurped by Daniel, but Pearl is oblivious and lavishes all her attention on him.

Dorcas feels utterly responsible for the robbery, and resolves never to meddle again – something which Minnie points out will be very hard for her. So when she hears from Steerforth that Gabriel's business and home are up for auction and that Gabriel's story of the bank's wrongdoing is not as simple as it appears, she has to fight the urge to get involved. But when an intervention with Ruby helps her friend come to terms with her doomed love affair, Dorcas finds that her involvement is more appreciated than she thought.

When Gabriel announces his plans to disrupt the auction of his foundry by publicly denouncing Steerforth, risking the ruin of his own reputation and future, she decides to try to help Gabriel face his demons and accept his own part in his downfall.

Gabriel, though, seems deaf to her pleas for sanity, so when the day of the auction arrives and Gabriel is nowhere to be found, Dorcas fears the worst and races to try to stop him carrying out his disastrous plan. But will she succeed, and will Gabriel embrace a new life in Candleford?

Richard Harrington plays Gabriel Cochrane, Julia Sawalha plays Dorcas Lane, Paul Ritter plays Mr Steerforth, Claudie Blakley plays Emma Timmins, Thomas Rhys Jones plays Edmund Timmins, Matilda Ziegler plays Pearl Pratt, Victoria Hamilton plays Ruby Pratt and Ben Aldridge plays Daniel Parish. The cast also includes Olivia Hallinan as Laura Timmins.

For Michel Roux great service matters as much as great food. He believes waiters and sommeliers are the unsung stars of the restaurant world and their brilliance transforms an ordinary meal into an unforgettable experience.

In this new series, Michel is on a personal mission to train eight young people, none of whom have previously considered this as a career, to become front-of-house superstars. But this isn't just about transforming these young people into great waiters; good service requires manners, discipline and self-confidence.

In episode one, viewers meet the eight young trainees who are set to learn the skills needed to run service in some of Europe's best restaurants. Ranging from an ex-school dinner lady to a history graduate and a young mum, they are all eager to improve their prospects and try something new. The two successful trainees will land a six-month scholarship with two of London's top hotels – so there is everything to play for.

But the road to success is not easy and the discipline starts when Michel introduces his right-hand man and leading restaurant manager, Fred Sireix. Fred teaches the trainees about Michelin-star dining, explaining how service should be run: waiters are like ghosts – neither seen nor heard. However, the luxurious treatment does not last long as the trainees soon find themselves taking full control of service in a high-street restaurant.

From learning the very basics, from carrying plates to greeting customers, the trainees get their first taste of service and the demands that come with that. As they serve more than 100 customers on Saturday night, Michel gets to see just what his new recruits are made of.

Lorraine Pascale, who quit the catwalk to become a top chef, baker and patissier, makes her TV debut in Baking Made Easy. Sharing her kitchen secrets, professional know-how and sheer passion for food, Lorraine believes: "Baking is about keeping it simple."

After quitting modelling, Lorraine trained as a chef and has worked in some of the best restaurants in London. She's also a mother, a food writer and a businesswoman. Her series focuses on modern baking and the recipes cover anything cooked in the oven – both sweet and savoury.

She kicks off with one of the simplest and fastest things you can bake – parmesan and poppy seed lollipops; they're canapés to die for and a feat of baking engineering. Next there's soda bread; no kneading, no rising, no effort – fresh bread doesn't get easier than this.

Lorraine conjures up a classic French patisserie – blueberry and lemon millefeuille – with a mixture of insider savvy and great shortcuts. "You're going to make a lot of friends with this dessert," says Lorraine.

She shares her basic recipe for shortcrust pastry. It's buttery, crumbly, and fantastic as a pastry case for an impressive fig, cream cheese and mint tart, which goes down a storm as the centre piece at a lunch for friends.

And finally Lorraine does some online shopping to bake a show-stopper cake for a friend's party; it's chocolatey, stunning to look at, delicious to eat and, what's more, easy to make. Lorraine comments: "When you see a cake like this in the shops or magazines you never think you'll be able to make a cake like it – but now you can."

Illusionist of the decade, Luis de Matos, is joined by business entrepreneur Peter Jones; Bafta- nominated magic act, the dark and twisted Barry and Stuart, team up with actor and comedian Adrian Edmondson; and the king of close-up magic, Chris Korn, is partnered by TV presenter Amanda Byram.

They all perform three magic acts in a bid to impress the studio audience and avoid the dreaded forfeit trick. Who will be taking on the extreme feat of mind over matter this week?

Kirsty's bruising secret is about to be uncovered by Adam, Jordan is kidnapped at knife-point and Ruth's behaviour worries Tess as the medical drama continues.

Kirsty is feeling the effects of Warren's latest beating. Adam is suspicious and concerned but she refuses to be drawn about the cause of her aching back. Suspecting possible fractures, Kirsty secretly arranges an X-ray on her injuries but Adam discovers the results first and confronts her about Warren's abuse. Warren later arrives with flowers for Kirsty and Adam tries to play it cool, but when Kirsty arrives home to find Warren waiting alone, she is terrified that trouble is brewing.

Jordan is forced into the back of a van at knifepoint by Liam, who drives him to a disused warehouse where Britney Carter (the cyclist from the car accident in last week's episode) has been stabbed in the neck.

She refuses to go to hospital in case the gang who attacked her tracks them down. Although Jordan manages to stabilise her, he warns Britney that she could die in an instant and she agrees to go to the ED while Liam flees. Henry is impressed with Jordan's dedication and surgical work in such difficult circumstances but will he change his mind and open the surgical position to an application from Jordan?

Meanwhile, Tess tries to convince the gang that they should offer Ruth some support after what happened with Edward. But Ruth, tyrannical as ever, becomes obsessed over a missing audit book. Tess finds it, but instead of facts and figures, it is filled with ramblings and doodles...

Shooting The Stars – Hollywood Photography

Fashion and celebrity photographer Rankin recreates some of the world's most iconic celebrity images in order to explore the glamorous world of Hollywood photography. The programme looks at wonderful images from Hollywood history and the vital role they play in our love affair with movie stars, featuring contributions from British photographer Terry O'Neill and celebrities including Hollywood legend Jane Russell, Michael Sheen (Frost/Nixon) and Selma Blair (Cruel Intentions).

Looking at the golden age of Garbo and Dietrich, brooding shots of Marlon Brando, and the amazing allure of images of Marilyn Munroe, Rankin sets about recreating what he considers to be some of the most important celebrity images of all time. He recruits a list of some of LA's leading creatives in hair, make-up, and costume to help him, and casts some of Hollywood's A-list talent in his reconstructions.

Some of the well-known faces to appear in the programme include leading Hollywood actors Leslie Mann (Knocked Up; 40 Year Old Virgin) and Matthew Rhys (Brothers And Sisters), with editorial contributions from Vanity Fair West Coast Editor Krista Smith. Shooting The Hollywood Stars investigates the cultural and practical history of photography through the lens of one of the UK's leading photographers.

CÖ÷²¥´óÐã's duo Dick and Dom are back to reclaim Saturday mornings with a new series showcasing the cream of the British comedy crop.

Filmed in front of a live studio audience, Dick And Dom's Funny Business finds the pair running their own comedy business. Each week their venue plays host to established comedy stars – including Stephen K Amos, Jason Byrne, Warwick Davis and John Thomson – and brand-new acts – including Idiots Of Ants, The Three Englishmen, Oram & Meeten, Frisky & Mannish and Pappys – in a mirthful mixture of sketches.

Recurring characters appearing on tape include The Wrestlers, who want to fight Dick and Dom; Animals' Den, where inventors pitch their animal-friendly products to furry entrepreneurs; and the 40-Year-Old Scout, whose leader won't let him leave until he has all his badges.

In addition, Dick and Dom showcase the art of slapstick in their History Of Comedy video demonstration, and they join house-band Abandoman in a big end number where they all sing the praises of the day's special guest in a razor-sharp improvised rap number.

The Wrestlers are played by Steve Burge and Tony Way, the Animals' Den entrepreneurs by Tommy and The Weeks, and the 40-Year-Old Scout and his leader by John Hopkins and Rich Glover.

The body of Umberto Ruspanti, a member of one of Rome's most prominent aristocratic families, is found underneath a bridge in the early hours of the morning, in the second film about fictional Italian detective Aurelio Zen – played by Rufus Sewell – based on the best-selling novels by the late Michael Dibdin.

Zen is assigned the case by the Ministry to ensure a swift conclusion of suicide but he quickly suspects murder. As things become more suspicious, Zen is alerted to the existence of the Cabal, a powerful, secret organisation which has members deep within various Italian institutes. It seems Ruspanti's attempts to sell information on the Cabal may have led to his demise.

While attempting to develop his relationship with beautiful colleague Tania, Zen is courted by powerful prosecutor Nadia Pirlo, whose advances mask her own desire to expose the Cabal – if it really exists. As Zen and Tania's romance is tested by her imminent divorce, their boss, the over-stressed Chief of Police Leo Moscati, is pushed to his limit and suffers a heart attack.

Several members of the department have their eyes on this coveted position, but Zen finds his prospects of advancement caught up in the conflicting interests of the police, the Ministry and his own conscience. It is up to Zen to break the Cabal and discover what really happened to Ruspanti. But, in doing so, he puts his own life, and those around him, in danger.

Zen is played by Rufus Sewell, Tania by Caterina Murino, Nadia Pirlo by Cosima Shaw and Leo Moscati by Stanley Townsend.

Arctic With Bruce Parry – Greenland: Inuit Hunters Ep 2/5

On the second leg of his Arctic expedition, Bruce Parry travels to Greenland. Immersing himself in the remote communities of this freezing world, he experiences at first-hand how the people of the Arctic live now and how their ancient ways of life may be about to change for ever.

Continuing his epic Arctic journey with hunters in the tiny town of Qaanaaq, in the far North of Greenland, Bruce visits one of the last surviving outposts of traditional Inuit culture where hunting is the main occupation.

In this breathtakingly beautiful and fragile wilderness, he learns some of the skills needed to survive – driving dog teams across the ice, fishing, melting sea ice for water and wearing clothing made from polar bear hide. The hunters also take Bruce into the wilderness on a seal hunt where he spends more than a week out on the sea ice.

In this remote part of Greenland, people pay more for staple food than anywhere else in the country – as much as 50 per cent more than European prices. A visit to the local supermarket shows Bruce how expensive food is in the high Arctic. For all Greenlanders, hunting is an important source of food and an integral part of life, but it is increasingly threatened by the spectre of global warming.

The people of Qaanaaq are worried about their long-term future and Bruce realises that he could be seeing some of the last traditional hunters in action and witnessing the last breath of a 3,000-year-old way of life.

To get a sense of just how the modern world has started to encroach on Arctic communities, Bruce heads south to Disko Bay, where he spends a day working on a new mine to get a sense of the challenges facing miners in Greenland. While global warming is causing problems for hunters, it is providing miners with new opportunities. As the ice melts, billions of dollars' worth of mineral wealth is being revealed. Greenland is about to strike it big, but will there still be a place for the ancient traditions of the Arctic in the 21st century?

Silent Witness – Lost: Part 1 Ep 3/10

When a preserved female body is found buried in a peat moor in Sheffield, DI Sonia Hardwick decides to call in an archaeologist, Professor Patrick Cain, in the first of a new two-part story of the forensic crime drama.

Nikki is temporarily working with the professor and he invites her along to the scene. Much to the annoyance of DI Hardwick, Patrick persuades the coroner to release the body for examination to the Lyell centre in London.

Meanwhile, Leo is out of sorts and Janet is worried but unsure what to do. His oddly subdued reaction to the arrival of the ancient bog body concerns Nikki and Harry.

As a group of excited students observe from the gallery, Patrick delivers a speculative lecture on the ancient bog body. Nikki finds evidence of knife wounds to the hands which the professor believes may indicate a ritual killing. However, findings of further wounds concentrated around the abdomen and genitalia suggest a sexually motivated attack.

Struck by a memory, Leo searches through his archives for a case he dealt with in Sheffield in 1985; the so-called "ketamine killings" carried out by self-confessed serial killer Karl Bentley. That night, he decides to examine the bog body himself and Nikki catches him in the act. Leo tells her he believes that the body could be a suspected victim who was never found – Jodie Fisher.

Leo travels to his home town of Sheffield to collect a DNA sample from Jodie's mother, Carol. The trip is an emotional one for Leo as he is haunted by memories of his dead wife and child. It is putting a strain on his relationship with Janet, just when they have decided to adopt a baby.

That night, on the streets of Sheffield, shop worker Kelly Summers is killed on her way home from work.

Joseph decides to pull back his hours to spend more time with his infant son Harry, but when Hanssen offers him a promotion it becomes more difficult to put family first, as the medical drama continues. Joseph eventually avoids getting sucked back in to long hours at the expense of his son when he decides to leave the hospital for good.

Sacha has tried everything to get back on Chrissie's good side. He's apologised, bought her shoes, and now he's volunteered to supervise her on her first week after her hearing. But Chrissie isn't having it and Sacha's apologetic efforts sideline his patients, putting their health at risk.

When Frieda learns she's being laid off, Penny begs her to consider applying for an F1 position; she's been a doctor before, after all. Frieda refuses at first but a day facing the wrath of the unforgiving Malick might just give her the motivation...

Leo attends the scene of Kelly's murder at DI Hardwick's request, in the concluding part of this episode of the forensic crime drama. It looks similar to the Bentley murders and the team speculate that it could be a copycat killing.

When the body of Kelly Summers arrives for post-mortem, Harry's examination reveals a textbook copy of the Bentley murders. Unable to find any evidence of penetrative rape, it appears that the wounds to the woman's abdomen and genitalia were inflicted after she died.

Meanwhile, Janet confronts Leo, who offers his usual excuse of "work". Exasperated, Janet knows he is hiding something and Leo invites her to see what's been keeping him so preoccupied. Janet speculates that the discovery of the bog body may have inspired a copycat killer to murder Kelly Summers.

While sifting through files from the 1985 investigation, DI Hardwick finds a letter to Bentley which unleashes a bombshell. She wonders whether Bentley may have had an accomplice.

When a TV crew arrives at the Fisher farmhouse to interview Carol, her husband, Bill, snaps and brutally attacks the journalist, landing himself in police custody for the night.

Karl Bentley watches the debacle on TV in his prison cell. Increasingly concerned by developments, and after reading newspaper reports about Kelly Summers, he calls Leo and asks to see him.

It's harvest time for Peter Ginn, Ruth Goodman and Alex Langlands

It's July on the Edwardian farm and harvest time means all hands on deck as the team, archaeologists Alex Langlands and Peter Ginn and domestic historian Ruth Goodman, face their busiest month of the year.

The team bring in the cherry harvest with the help of their Dartmoor pony, Laddy; Ruth tries her hand at salmon netting; and Alex and Peter take drastic measures to save their potato crop from being destroyed by plant disease.

Ruth drops in on an Edwardian school room where local school-children are shown how they would have been educated during the Edwardian era. The school would have usually housed 60 children, but during the harvest season most of the boys would have been in the fields labouring. This would soon change – a number of laws made schooling compulsory – but for now, in a history lesson like no other, the children rally round and help the farming team to bring in the potato harvest, where every potato must be collected, sorted and washed.

Once this is done the team can relax with a rare day out at the seaside, the only holiday an Edwardian farmer would have had, complete with musical entertainment, new-fangled swimming costumes and a Punch and Judy show.

The Hustle gang are near to closing a small con in a café, as the drama continues, until Joe Ryan – an old flame of Emma's – turns up unexpectedly and blows their cover. Intrigued to see what he's been up to since the pair last met, Emma arranges to meet him for a glass of wine...

She soon discovers that his wife tragically died a few months earlier, causing Joe to take six months off work to care for their son. Now poor Joe is knee-deep in debt and set to lose his home after becoming involved with a dodgy money-lending business called Dosh4you. With Emma unable to let go of the past, it looks like the Hustlers have found their next mark.

Leaving Albert in London, Mickey, Ash, Sean and Emma head to Birmingham in order to reel in their target – entrepreneur and founder of Dosh4you Georgina Althorp. However, despite her many business achievements, Georgina can't escape her lowly background – try as she might to become accepted in the circles of the social elite.

The Hustle team conjure up a brilliant con to entice Georgina with what she most desires – a title and a castle to go with it. But the Hustlers soon find it harder than they'd initially thought to give the ruthless businesswoman a taste of her own medicine.

As Ö÷²¥´óÐã Radio 3 broadcasts its Genius Of Mozart season, playing every note that Mozart wrote from Saturday 1 to Wednesday 12 January 2011, Ö÷²¥´óÐã Four reflects the strand by giving viewers another chance to see the celebrated Mozart Uncovered series.

Each episode of this three-part series concentrates on one of Mozart's mature masterpieces – two symphonies and a piano concerto, tonight focusing on his Symphony No. 39.

In the first half of each programme, conductor Charles Hazlewood explains and demonstrates how Mozart's music is put together, with the help of a specially formed orchestra playing period instruments.

Each episode concludes with a complete filmed performance of the work. Mozart's D minor Piano Concerto is broadcast at 7.30pm on Friday 7 January with his Symphony No. 40 broadcast at 7.30pm on Friday 21 January.

Tracy Beaker has to deal with her own insecurities and Toby falls for a mysterious girl in the Bafta award-winning drama series devised by acclaimed children's author Jacqueline Wilson.

Toby gets trapped in a lie when he falls for a mysterious fellow comic fan called Sara and ends up pretending that his temporary foster parents are his real mum and dad. Things go from bad to worse when Sara reveals that her mother is dead.

Toby finally plucks up the courage to tell Sara the truth about his parents. However, his confession doesn't go to plan when she runs away. It seems he is not the only one who's been keeping secrets.

Meanwhile, Tracy is finding life in the flat with Lily hard work and so takes a second job to avoid spending time at home. When Lily borrows Tracy's top and ends up ruining it, it's the final straw. However, after some home truths from Carmen, Tracy has to confront the real reason she's not been getting along with Lily.
