Briony's Apple Sweet Treats

Apple Roll-Ups

Ingredients:

4 red apples, peeled, cored and chopped

2 tbsp caster sugar

1 tbsp honey

1 tbsp lemon juice

1 tsp mixed spice

120ml water

Method:

1. Oven on to 80C fan and line a baking tray with non-stick parchment paper.

2. Place all the ingredients into a pan and cook on a medium heat for 10-15 minutes until the apples are breaking down.

3. Take off the heat and mash then blitz with a stick blender until smooth.

4. Spread evenly over the parchment paper into a rectangle a few millimetres thick then bake for 3 hours until tacky to the touch but not sticky.

5. Leave to cool then slice into strips and enjoy.

Apple Crumble in a Mug

Ingredients:

1 red apple, cored and chopped

1 tsp caster sugar

1 tsp lemon juice

1 tbsp water

½ tsp mixed spice

1 tsp butter

1 tsp plain flour

1 tsp granulated sugar

½ tsp demerara sugar

1 tsp rolled oats

Method:

1. Place the chopped apple, caster sugar, lemon juice, water and mixed spice in a mug.

2. Microwave on high for 3 minutes.

3. Mix the butter, flour, sugars and oats together in a bowl.

4. Top the apples with the crumble then microwave for another minute.

Suggestion: If you want to brown the top, pop it under the grill for a few minutes.

Rosy Apple Pastries

Ingredients:

· 2 red apples

· 2 tbsp caster sugar

· 1 tsp cinnamon

· 1 pack of puff pastry

· 1 egg

Method:

1. Heat the oven to 180C fan.

2. Chop the apples in half then thinly slice.

3. Mix the sugar and cinnamon together then dip the apple slices in to coat.

4. Cut out 8cm circles of puff pastry using a mug or cookie cutter and place in the bases of a cupcake tray. Beat the egg then brush over the pastry.

5. Place the apple slices, peel up, in the puff pastry in concentric circles to create a rose effect.

6. Bake for 15 minutes then pop the pastries out of the tray and place back in the oven until the pastry is browned.

7. Serve with ice cream or custard.
