Briony's Onions Three Ways

Caramelised Onion Dip (serves 8 to 10):

Ingredients:

  • 1 tbsp salted butter
  • 2 red onions
  • 50ml balsamic vinegar
  • 200g cream cheese
  • 200g sour cream
  • Fresh chives

Method:

  1. Heat a large frying pan and add the butter. Dice the onions and add to the pan when the butter has melted.
  2. Keep on a medium to low heat and cook for 20 minutes stirring regularly. Add the balsamic vinegar and cook for a further 5 minutes until sticky.
  3. Mix the cream cheese and sour cream together.
  4. Dice the cooked onions then chop the chives and stir both through the cream cheese mixture.

Viral Onion Burger (serves 4):

Ingredients for Patties:

  • 500g beef mince
  • 1 red onion, diced
  • 1 large egg
  • 2 tsp herbes de provence
  • 2 slices day old white bread, blitzed into crumbs

Ingredients to serve:

  • 2 large brown onion
  • 1 large tomato
  • Lettuce
  • Sliced cheddar
  • Burger sauce

Method:

  1. Mix all the ingredients together in a bowl then knead with your fingers to combine.
  2. Form into 4 patties.
  3. Fry in a hot pan with olive oil until browned and cooked through flipping regularly.
  4. Slice the brown onion into 4 rings. In a frying pan, with a drizzle of olive oil, cook the rings, flipping regularly until softened and browned. (Top tip, add the cheese to the onion rings whilst in the pan for a lovely melted addition!)
  5. Stack the patties with the onion rings, cheese, tomato, lettuce and burger sauce.

Spiced Onion Soup (serves 2):

Ingredients:

  • 30g salted butter
  • 4 brown onions
  • 2 garlic cloves
  • 1 tbsp plain flour
  • 100ml apple cider vinegar
  • 500ml vegetable stock
  • 2 tsp cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • ½ tsp nutmeg
  • Bread for croutons (baguette or ciabatta)

Method:

  1. Oven on to 180C fan/200C.
  2. Line a large baking tray with parchment paper.
  3. Slice the onions and add to the tray. Add the olive oil and 2 tablespoons of water then give it a mix up to cover the onions.
  4. Pop the garlic cloves on the tray (no need to peel) and pop in the oven for 40-45 minutes, stirring every 15 minutes, until soft and browning.
  5. To make the croutons, cut up the ciabatta/baguette into chunks, place on a baking tray and drizzle with olive oil, the dried oregano and a sprinkle of salt.
  6. Bake for 10 minutes until browned and crunchy.
  7. Remove the tray from the oven and pop the garlic out of its skin. Remove the parchment paper.
  8. Add all the other ingredients (except the bread), stir together then blitz with a blender.
  9. Divide into bowls and top with the croutons.
