Anna's Chilli Con Carne

Serves 12

Ingredients:

  • 1 tbsp vegetable oil
  • 500 g minced pork
  • 500 g minced beef
  • 2 red onions
  • 2 carrots peeled and chopped
  • 1 clove of garlic chopped
  • 1 tsp chilli flakes (chipotle are great)
  • 1 tbsp sweet smoked paprika
  • 1 stick of cinnamon
  • 2 tbsp cumin seeds
  • 1 bunch of fresh coriander chop the stem and keep the leaves
  • 2 x 400 g tins of plum tomatoes
  • 1 x 400 g tins of kidney beans
  • 2 tsp sugar
  • 2 tsp salt
  • 1 tbsp of vinegar (red wine, white wine or balsamic work best, but use what you have)

Extra:

  • Garlic bulb roasted in tin foil pinch of salt and 1 tbsp of oil for 30mins

Method:

1) Add oil to a large pan and fry your mince on a medium high heat until brown.

2) Pour away excess fat, then add the chopped garlic. Cook for 1-2 minutes.

3) Add the chopped onions and cook for 1-2 minutes.

4) Stir in the spices including the coriander stems, save the leaves.

5) Tip in the chopped carrots, tomatoes and 1 tin of water.

6) Cook for 2 hours on a low heat or until the meat has become very tender. Stir every so often.

7) Add the kidney beans. To enhance the flavours stir in the vinegar and sugar. For an extra flavour kick crush in roasted garlic one at a time to taste. Save any extra roast garlic for another meal. Adjust spicing and season.

8) Serve with plain carb like boiled rice, potatoes or couscous. Garnish with ripped coriander. Enjoy!
