Briony's Parsnip Coleslaw

Serves 8-10 people.

INGREDIENTS:

  • 2-3 parsnips
  • 2 carrots
  • ½ red cabbage
  • Stem of broccoli
  • 1 red onion
  • 2 sticks celery
  • 50g mangetout
  • 50g mayonnaise
  • 50g plain yogurt/crème fraîche or more mayonnaise
  • 2 tbsp apple cider vinegar/red wine vinegar
  • ½ tsp ground nutmeg
  • Salt and pepper to taste

METHOD:

  1. Top, tail and grate the parsnips and carrots. Thinly slice the red cabbage, red onion, celery, broccoli stem and mangetout.
  2. Put all the veg in a bowl then add the mayonnaise, yogurt/crème fraîche, vinegar, nutmeg, salt and pepper. Mix well to combine.
