主播大秀made Spiced Chutney

Ingredients (makes 6 glass jars):

  • 1kg Bramley apples, thinly cubed
  • 2 red onions, finely chopped
  • 350ml cider vinegar
  • 300g dark brown soft sugar
  • 175g dried cranberries
  • 1 tsp ground allspice
  • 1 tsp ground nutmeg
  • 1 ½ tsp dried chilli flakes
  • 10cm fresh root ginger, peeled and finely grated
  • 6 garlic cloves, finely chopped
  • 2 tsp salt
  • 1tsp black pepper

Method:

  1. Peel, core and finely dice the apples, and put into a large, heavy based pan. Throw in all the other ingredients. Stir.
  2. Heat up to a high temperature. When it starts to bubble, reduce slightly. Keep on stirring gently. If it is really bubbling, reduce the temperature. You want to see it bubbling very gently.
  3. Keep that going for about 30-45 minutes until it is fairly thick.
  4. To check whether the chutney is ready, drag a wooden spoon along the base of the pan to form a channel. If the channel holds for a short while, then your chutney is ready. If it is not, continue cooking.

Top Tips:

  • Ladle into sterilised jars and seal. Allow to cool completely and set aside to mellow for at least two weeks before opening.
  • To sterilise, wash jars and lids in hot, soapy water. Rinse thoroughly. Place on a baking tray and dry completely in a preheated oven (140c) for about 10 minutes.

主播大秀made Oat Biscuits

Ingredients (makes 20):

  • 225 grams porridge oats
  • 60 grams wholemeal flour
  • ½ tsp salt
  • ½ tsp sugar
  • ½ tsp bicarbonate of soda
  • 90 grams butter
  • 80ml boiling water

Method:

  1. Mix 225g oatmeal and 60g wholemeal flour in a bowl.
  2. Add ½ tsp salt, ½ tsp salt, ½ tsp sugar and ½ tsp bicarbonate of soda to the dry ingredients and mix well.
  3. Cut 60g of butter into cubes and add to the oatmeal mixture.
  4. Rub the butter into the dry ingredients until it is the consistency of breadcrumbs.
  5. Boil the kettle and add enough water to form a stiff dough.
  6. Sprinkle a little flour on a work surface or pastry mat and also on your rolling pin. Roll out the dough to thickness of about ½ cm.
  7. Cut into 20 rounds. For more oatcakes use a smaller cutter.
  8. Place a piece of baking parchment in the base of your air fryer and bake each batch at 170C for 10-15 minutes, or stick them in the oven for 10 minutes.
